Bariatric Energy Bars recipe

 I tried this recipe last night, and got a big thumbs-up from my kids! I used Splenda in my recipe. Very easy to make and very filling! I may try dipping the bottom of these in some dark chocolate next time, as they are very low in sugar and have a good amount of protein. Yummmmm!

Bariatric Energy Bars

  • Serves: 10-12, Yield: 10 bars

 About This Recipe

"Try adding a teaspoon of almond extract...or make a chocolate version using chocolate protein powder, and a little cocoa powder. This came from Obesity Help."

Ingredients

    • 1/2 cup light vanilla yogurt
    • 1 eggs
    • 3/4 cup Splenda sugar substitute or 3/4 cup stevia, in the raw
    • 1 1/2 cups quick-cooking oats
    • 2 tablespoons ground flax seeds
    • 1 scoop vanilla protein powder
    • 1/3 cup creamy peanut butter
    • 1/4 cup chopped walnuts

Directions

  1. In a medium bowl, whisk egg, yogurt, and Splenda until smooth.
  2. Stir in oats and flaxseed. Fold in the peanut butter, protein powder, and walnuts.
  3. Spread mixture into an 8-inch square pan coated with non-stick cooking spray. Bake at 350 degrees F for 25 - 30 minutes.
  4. Let cool and cut into 10 - 12 bars!
